Amazing Maja Blanca

Favorite Filipino dessert, usually loaded with evaporated milk, condensed milk & white sugar. One of the WORST acid-forming combination you can ever make. But this version is outside the usual version because it is purely dates sweetened. We can still enjoy desserts with no guilt.

Refined sugars are acid-producing and can cause the inflammatory processes in our body, not mentioning the harmful impacts on the brain function and the immune system. Dates are so natural, high in fiber and will not cause spikes in the blood sugar. This makes one regular medium pan.

? RECIPE

? Ingredients:

▪︎ 2 cans (13.5 fl oz each) coconut cream

▪︎ 8-10 pcs of dates

▪︎ 3/4 cup cornstarch, dissolved in 3/4 cup water

▪︎ 1/2 cup corn kernel, drained

1/2 cup desiccated coconut

? Instructions:

▪︎ Blend coconut cream and dates til smooth. Transfer to a pot and bring to simmer.

▪︎ Add the corn kernel. Pour in the cornstarch mixture and stir constantly and quickly until the texture turns into a paste-like consistency. Remove from heat and transfer to pan immediately.

▪︎ Gently tap the pan on the kitchen counter a couple of times to get rid of trapped bubbles and even out the surface with spatula or spoon. Let the Maja Blanca settle and cool down.

▪︎ Toast the coconut flakes in a pan over low fire until browned. Stir constantly to avoid burning them.

▪︎ Sprinkle top with toasted coconut flakes.

▪︎ After cooling for about an hour, keep in the fridge for few hours before serving. Best served when cool.
