This Cauliflower Taco is such a flavorful & nutritious dish ! A tasty Mexican treat even kids will surely love. My kids had to request I make another batch. No need for processed meat alternative ! The cauliflower rice excellently absorbs the flavor from those spices. You’d look forward to making this again ! Good for 2 to 3 people.

? Ingredients:
▪︎ 6 pcs taco shells
▪︎ basic salsa (recipe below)
▪︎ cauliflower taco filling (recipe below)
? For the Cauliflower Taco filling:
▪︎ non-stick oil spray or minimal water, about 1-2 tbsp for sauteeing
▪︎ 2 cups of cauliflower rice (cauliflower florets pulsed in food processor)
▪︎ 2- 3 tsp taco seasoning
▪︎ 3 tsp tamari sauce or light soy sauce
▪︎ 1-2 tsp cumin powder
▪︎ 1-2 tsp garlic powder
▪︎ 1-2 tsp onion powder
▪︎ 1 tsp paprika
? Instructions:
▪︎ In medium heat, sauté cauliflower rice in a pan coated with non-stick oil spray or minimal water. Add all the seasonings for the taco filling until just cooked. Do not overcook.
▪︎ Preheat oven to 350 deg Farenheit & bake taco shells for about 2 to 3 mins. While preheating the oven, you can start making your Basic Salsa.
? For the Basic Salsa, combine together the following in a medium bowl :
▪︎ 1 medium ripe tomato
▪︎ 1 shallot, small diced
▪︎ few big squeezes lime juice
▪︎ handful chopped cilantro
▪︎ 1 jalapeño, thinly sliced, seeded
▪︎ Himalayan salt to taste
▪︎ After everything is ready and once taco shells cooled down, you can spread your taco fillings first inside the shells, then on top, your salsa. You can top with either chopped green lettuce or sprouts. Great when served with avocado slices too & lime wedges! Enjoy !!
