This raw “pasta” is unbelievably delish. With little effort, your family will surely love it. Combination of fresh tomatoes, sundried tomatoes & basil give that bomb of flavor ! It’s like a fine dining experience ! If you have no access to zucchini, you can use cooked pasta you have. I used sundried tomato with olive oil in a jar so it was soft. You might need to rehydrate your sundried tomato by soaking in warm water 30 mins before using it. This recipe is good for 4 to 5 people.

For the “zoodles”:
▪︎ 3 to 4 zucchini medium sizes
▪︎ few sprinkles of himalayan salt
For the raw marinara sauce:
▪︎ 1/2 to 1 cup sundried tomatoes
▪︎ 1 to 1 1/2 cups fresh tomatoes, diced
▪︎ 2 handfuls of basil leaves
▪︎ 4 to 6 cloves of garlic
▪︎ few squeezes of lemon juice
▪︎ Himalayan salt to taste
? Instructions:
▪︎ To make the “zoodles”, just spiralize your zucchini using a spiralizer or you can also substitute it with cooked pasta if you cannot find zucchini in your area.
▪︎After spiralizing it, add your Himalayan salt and massage it a little bit. The purpose of this is to draw water from the zucchini noodles so it creates that al dente texture. Drain the juice or transfer it to a cup which you could use for your broth.
▪︎ For the marinara sauce, using a food processor or blender, blend all the ingredients for the sauce and transfer to a dish.
▪︎ You can either mix the zoodles or pasta, together with the sauce or add the sauce on top of your “pasta” before serving it. It’s up to you how you want to serve it.
