Kale & Jackfruit in Coconut Milk

Simple but so delish, seriously ! Can you already smell the lemongrassy aroma in this easily cooked vegetable dish’s photo ? Best with steamed rice. Naturally meaty dish without the meat! This recipe is good for 5 to 6 hungry people.



? Ingredients :

▪︎ 2 cups or 450 gm canned green jackfruit, in small wedges

▪︎ 3-4 stalks of lemongrass or few drops of lemongrass food grade essential oil

▪︎ 1 medium bunch of kale (curly kale is tastier) , hard core removed & leaves chopped up

▪︎ 400 ml full fat coconut milk or cream

▪︎ few pieces of chilis of your choice

▪︎ 2 to 3 tsps of garlic powder or minced garlic

▪︎ 2 to 3 tsps onion powder

▪︎ 1 tsp coconut sugar

▪︎ Himalayan salt to taste

▪︎ few dashes of natural umami or mushroom seasoning

? Instructions:

▪︎ Simmer, while covered, jackfruit wedges & lemongrass stalks in coconut milk together with all the seasonings, for about 10 to 15 mins until almost soft.

▪︎ Add & stir in the curly kale leaves & chilis and simmer covered for about 3 to 5 mins until kale is just soft enough. Add more seasonings if you need to.

▪︎ Stir the veggies so everything will be evenly cooked.  Ready to serve !
