A full breakfast is ideal especially if one is a worker. Potatoes are good energy food because it’s a good source of complex carb, plus fiber & some protein. I love this with scrambled tofu plus toast. Recipe should be good for 4 to 6 hungry adults.

? Ingredients :
▪︎ 4 medium potatoes
▪︎ 1/2 green bell pepper, chopped
▪︎ 1/2 red bell pepper, chopped
▪︎ 1 medium onion, chopped
▪︎ 1 cup of crimini mushroom or similar mushroom of your choice
▪︎ drizzle of tamari sauce or light soy sauce (optional)
▪︎ 1/2 tbsp neutral cooking oil plus oil for greasing the pan
▪︎ salt and pepper to taste
? Instructions :
▪︎ Just boil the potatoes in water until they are just fork tender. Try not to over-cook them, otherwise they will start to fall apart when in the pan.
▪︎ Once the potatoes are cooked, not before, cut them into twice the size of dice.
▪︎ Grease a pan and pan-fry the potatoes on medium-low until light brown on the sides. Low & slow does the trick ! Then set aside.
▪︎ In the same pan, pour your cooking oil, then on medium heat, saute chopped red onion for about 30 secs.
▪︎ Add in your mushrooms, green and red bell peppers then drizzle of either tamari or soy sauce & season with salt & pepper.
▪︎ Stir quickly & cook covered for about few minutes or until bell peppers are half cooked. Then add in the potatoes. Don’t overcook. You don’t want your potatoes to be soggy.
