Vegan Filipino Corned Beef Hash

A DELISH transition treat for my heavy working hubby per his request & I’m not complaining ! Hubby says it tastes 99% real corned beef. ? He’s still a newbie & I cook this when he craves corned beef. Best with Beyond Burger because of that beefy flavor but you may explore using your own choice of alternative meat.

CORNED BEEF HASH the Filipino way is so delish, glad it could still be veganized w/ cabbage & potatoes. It would be quite a challenge to practice some control eating this. GREAT with GARLIC RICE ! YUM YUM ! This recipe is good for 3 to 4 people. ❤

? Ingredients:

CORNED BEEF SPICE BLEND  Mix the following together & set aside (just use whatever spice you have available but don’t skip the cloves & ginger powders)

▪︎ 1/4 tsp  ground cloves

▪︎ 1/8 tso ground cardamom

▪︎ 1/4 tsp ground allspice

▪︎ 1/4 tsp ground cinnamon

▪︎ 1/4 tsp ground paprika

▪︎ 1/4 tsp ground ginger

▪︎ 1/4 tsp ground coriander

 

CORNED BEEF HASH

▪︎ 1 small onion, diced

▪︎ 1 tbsp minced garlic

▪︎ 1 package Beyond Burger (or 8 oz beef-style crumbles)

▪︎ 1 medium potato (peeled & cubed)

▪︎  1 cup shredded cabbage

▪︎ 2 tsps corned beef spice blend

▪︎ olive oil for sauteing

▪︎ himalayan salt to taste

 

? Instructions:

▪︎ On medium heat, saute in a pan garlic til light brown (don’t burn) then add in diced onion and saute til quite translucent.

▪︎ Add in potatoes & stir & add a splash of water to help cook the potatoes and just to keep it from sticking to the pan. Cover with lid and simmer til potatoes are quite soft.

▪︎ Next is add your Beyond Burger & all spices on top, cover with lid. You may add a little bit of water if bottom is already dry. Simmer for few minutes til quite soft then open the lid, mash the Beyond Burger with a fork to separate it into corned beef consistency.

▪︎ Add in the cabbage on top & put back the lid on and steam the cabbage for about a minute or two.

▪︎  When done, stir all the ingredients together just to distribute the flavor evenly. You may add chopped green onions as garnish. Great when served with garlic fried rice ! Enjoy !
