Not a mac-n-cheese lover but my kids are. We have made the cashew version of this dish before but in this age when some food items are pricey to those who cannot afford it, I made this potato and carrot version which is more budget-friendly. I love the fact that it’s still tasty. Thanks to the nutritional yeast’s cheesy kick ! Good for about 4 people.
?RECIPE
? Ingredients:
▪︎ 2 to 3 medium potatoes, peeled & diced
▪︎ 2 to 3 medium medium carrots, peeled & diced
▪︎ 2 shallots or 1/2 medium onion, chopped
▪︎ water to fill pot about 1 inch, about 1/2 cup
▪︎ 2-3 tbsp nutritional yeast
▪︎ salt to taste (healthier to use whole salt like himalayan salt)
▪︎ 1 tbsp garlic powder
▪︎ 1 tbsp onion powder
▪︎ 2 tbsp lemon juice
▪︎ 2 tbsp extra virgin olive oil, optional
▪︎ 3 to 4 cups cooked macaroni
? Instructions:
▪︎ Put the potatoes, carrots & shallots in the pot with water and simmer covered until soft.
▪︎ Transfer to blender together with the rest of the ingredients except the macaroni.
▪︎ Blend til soft. Add minimal water & adjust amount of flavorings if necessary.
▪︎ Add to your cooked macaroni. You may add bread crumbs on top for some crunch ! Enjoy !
