Yam Leaves, Bittermelon & Seaweed Salad

If there is ever a time to eat as if our lives depend on it, it is now !

My first time to make this kind of combination of ingredients and it turned out to be really good, that even the kids said that they really liked it! And the best part of it is, it has ingredients that will naturally boost your immune system! What could be a best time to eat for health than now! And the sweet part of it is, both the yam leaves and bittermelon came from our garden!

This may be good for about 4-5 medium servings.

🌻 RECIPE

🌱 Ingredients:

▪︎ 1 bunch of yam leaves, without stem, chopped

▪︎ 1 medium bittermelon, thinly sliced

▪︎ 1 pack or 1 cup of fresh naturally seasoned small sized seaweeds (I got mine from a Korean store, you can alternate with what fresh seaweed you can find)

▪︎ 1/3 to 1/2 cup lemon juice

▪︎ half red onion, diced

▪︎ 4 cloves of garlic, crushed & minced

▪︎ 2 thumb-sized cuts of ginger, minced

▪︎ Himalayan or sea salt to taste

 

🌱 Instructions:

▪︎ Put both the chopped yam leaves and thinly sliced bittermelon in a bowl and add a pinch of sea salt and start massaging it til both become soft.

▪︎  Add the seaweed of your choice and mix them evenly.

▪︎ Add the rest of ingredients, combine together & adjust the amount of salt to taste. For healthier version, you may skip the salt as the ingredients especially seaweed and garlic can already add some saltiness to this salad dish.

▪︎ Best served when cool. Enjoy !
